Seasonal menus adapted the seasons. Winter menu 2004: Foie-gras cooked in
red wine and pepper, black potatoes from the Canary Islands with cephalopods
(cuttlefish, squid etc.) in leeks, crayfish in a foamy cream with
vegetables, crayfish flavoured with spices, scallop in “sofregit”
(fried vegetable sauce), sea perch with beans and garlic sauce, bacon
a la "crepinette" with truffles, ring of beef with mashed
potatoes, pigeon in cardamom preserve, guineau fowl smoked with fruit,
young gout in sage, “Fabes” cheese sorbets, rum baba,
and petits fours.
